Best breakfasts don’t just have to be delicious; rather it should be delicious and have enough energy to keep you going at least for the better half of the day. To achieve this, one must include balanced amount of carb, protein and starch in the breakfast.
Below are 3 such recommendations for a balanced and high energy breakfast.
Protein Pancakes with Yogurt and Oats
Who says you can’t have pancakes on a high protein diet? These healthy pancakes contain 10-13 grams of protein per cake. They’re made with oats, yogurt, eggs, and a touch of natural sweetener.

Ingredients:
- 1–2 cups old-fashioned rolled oats*
- 1 cup Greek yogurt
- 3 eggs
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract
- 1/8 teaspoon salt
- 2 tablespoons agave nectar (can sub honey, maple syrup, sucunat, or coconut sugar)
- 1 teaspoon baking powder
- coconut oil, butter,or oil of choice
Cooking instructions:
- Put all ingredients in the blender and blend until very smooth.
- Heat a pan with about 1 tablespoon of coconut oil.
- Pour a small amount of batter into the pan. Cook about 4-5 minutes on the first side and 2-3 minutes on the second side.
- Repeat until all the batter is gone (or cook them all on one large griddle)

Tofu Scramble with Corn, Mushrooms and Bell Peppers
This hearty breakfast dish cooks up quickly and is a delicious alternative to the usual egg scramble. Sweet corn adds color and crunch (frozen will do just as well as fresh in winter), while fresh ginger, curry powder and cilantro provide a boost of flavor.

Ingredients:
- 2 tsp. plus 2 Tbs. olive oil
- 2 Tbs. fresh lime juice
- 4 tsp. low-sodium soy sauce
- 1 Tbs. sweet curry powder
- 1-inch (2.5-cm) piece fresh ginger, peeled and grated or minced
- 1 lb. (500 g) firm tofu, drained and cut into 1-inch (2.5-cm) cubes
- 8 oz. (250 g) cremini mushrooms, sliced
- 2 garlic cloves, pressed or minced
- 1 bunch green onions, white and pale green parts, thinly sliced
- 1 red bell pepper, seeded and thinly sliced
- 1 cup (6 oz./185 g) sweet yellow corn kernels, thawed frozen or cut from about 2 ears of corn
- 2 Tbs. chopped fresh cilantro
Instructions:
In a large bowl, stir together the 2 tsp. olive oil, the lime juice, soy sauce, curry powder and ginger. Add the tofu and stir gently to coat.
Heat 2 Tbs. olive oil in a large frying pan over medium-high heat. Add the mushrooms and cook, stirring often, until they release their juices and begin to brown, 3 to 4 minutes. Stir in garlic and green onions and cook until garlic is fragrant and onions are softened, about 1 minute. Stir in bell pepper and corn and cook until softened, 1 to 2 minutes.
Add the tofu with its marinade. Stir to combine and break up the pieces of tofu slightly. Cook, stirring often, until the liquid is evaporated and parts of mixture are crusty and browned, about 5 minutes longer. Remove from the heat, stir in the cilantro and serve immediately. Serves 4.
Potato, Egg and Cheese Breakfast Tacos

Ingredients:
- 2 large russet potatoes, scrubbed but unpeeled
- 2 Tbs. olive oil
- 1 small yellow onion, chopped
- Kosher salt and freshly ground pepper
- 8 large eggs
- 1 Tbs. unsalted butter
- 8 corn or flour tortillas, each about 6 inches (15 cm.) in diameter, warmed
- 1 cup (4 oz./125 g.) shredded Monterey jack or Cheddar cheese
Instructions:
Put the potatoes in a large saucepan and add enough cold salted water to cover. Bring to a boil over high heat. Reduce the heat to medium-low and simmer until tender when pierced with the tip of a knife, about 25 minutes. Drain and rinse under cold running water. Refrigerate until chilled, at least 2 hours or up to overnight.
Peel the potatoes and cut into small cubes. In a large frying pan, preferably nonstick, heat the oil over medium-high heat. Add the potato cubes and cook, stirring occasionally, until browned, about 10 minutes. Add the onion and cook, stirring often, until softened, about 2 minutes. Remove from the heat and season with salt and pepper.
Meanwhile, in a bowl, whisk together the eggs, 3/4 teaspoon salt, and 1/4 teaspoon pepper just until thoroughly blended. Do not overbeat. Return the pan with the potatoes to
