These vegetable falafels, made with broccoli, cauliflower and chickpea, are sure to be a hit with the whole family.

What You Need?
Here are the ingredients you need to make 10 delicious vegetable falafels.
- 3 florets broccoli
- 3 florets cauliflower
- 1 small potato, peeled and cubed
- 200gm chcikpeas, drained
- 1/4 cup chickpea flour
- a pinch of cumin
How To Make Vegetable Falafels
The great thing about falafels is how easy they are to make.
- Boil the broccoli, potato and cauliflower for 10 minutes in a medium pot.
- Drain the chickpeas and add to a bowl with the cumin and mash the chickpeas.
- Drain the broccoli, potato and cauliflower and add to the mashed chickpeas.
- Mash further until the mixture is quite smooth.
- Add the chickpea flour and mix all the ingrediencies until combined.
- Fry: heat 1/2 tbsp of oil in a frying pan over medium heat. Fill an ice cream scoop with the mixture and drop into the pan. Flatten slightly with a fork/spatula. Fry for 2-3 minutes on each side.
How To Serve?
Finger foods always seem to be a winner with kids and these are no different. Remove from the pan and cut into fingers to serve. You can serve with a homemade hummus or tomato wedge. If you are serving hummus to a 6 months old baby, just be mindful to test hummus first as it has tahini in the hummus which is an allergen.
